Gluten Free on the Go

I am always on the look out for food that can be taken on road trips, airplane flights, dinner parties, church potlucks, birthday parties, summer camp, etc. In the past I bought things that could be heated in microwaves at gas stations, camp (church or friends) kitchens, etc. Recently I have become a fan of packing my own lunches etc. with food we've made ourselves. It is much more cost effective. Here are some ways to pack a lunch not only in style but also efficiently.


The above lunchbox is called the Laptop Lunchbox and is available from several internet sources. I think it is great. It comes in several neat colors. I like the pink one. It is going on my Christmas wish-list (but I'd really like to have it for summer camp). This is a Ms. Bento "lunchbox" system. It allows you to carry hot foods like soups and have them stay hot for lunch because of the thermos insulation. What makes it great is that you can pack soup on the bottom , rice or pasta on top of it, and then on the very top you can pack some kind of snack or dessert. All that and it fits in the thermos!

Grinding gluten free flour

My wonderful husband allowed me to purchase this as an anniversary present this year. I love this appliance. This grain mill used to be called the Whisper Mill. It is now manufactured with the name Wonder Mill. It is supposed to be the quietest grain mill on the market. It makes me wonder what the loudest one sounds like because honestly I feel like I need to wear ear plugs when I use this mill. I use it to make white rice, brown rice, and bean flours. It sure cuts down on the cost of gluten free flour. I tell myself it is better for us since the flour is freshly ground and has more nutrients.

Gluten Free Granola



Gluten Free Granola

4 cups Bob's Red Mill Gluten Free rolled oats (see previous post regarding these)
1 cup sliced almonds (kroger brand is gluten free)
1 cup chopped pecans (kroger brand is gluten free)
1 cup Natures Path gluten free crispy brown rice cereal
1/3 cup canola oil
1 cup honey
1 teaspoon McCormick real vanilla extract
1 Tablespoon McCormick ground cinnamon

DIRECTIONS

1. Preheat oven to 300 degrees F.
2. In a large bowl, stir oats, nuts and rice cereal together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. (If you measure the oil first and then the honey, it will make the honey slide out of the cup easier.) Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
3. Bake in preheated oven, for 10 minutes
, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing. I cool it in my big Tupperware "that's-a-bowl" and put the cover on after it has cooled. If you wash the pans while they are still warm it will be a lot less work to clean up.
